The Gulit Project is a research and development initiative focusing on urban resilience through food preservation strategies in the markets of Addis Ababa, Ethiopia. Working side-by-side with local citizens, market vendors and sustainability organizations, our goal is implement new methods in clay based construction to showcase the importance in food security and to help reduce food waste across the city.

After 4 intense days of construction, the team invited market vendors, the general public as well as invited guests to Agoza Market for a day long event about the importance of food preservation.

The exhibition pavilion was curated into a series of small presentations each focusing on different techniques including, drying, canning, clay zeer pots, hanging clay pots, underground cooling, as well as a prototype for new mobile vendor. Together, the exhibition was the first step in having a mass exposure of the Gulit Project and begin a stronger dialogue with the general public.

The success of this event began a city wide interest in the project and we have since began working with 3 other markets,. Gerji Market, Kotebe Market and Akaki Market.
