The Gulit Project is a research and development initiative focusing on urban resilience through food preservation strategies in the markets of Addis Ababa, Ethiopia. Working side-by-side with local citizens, market vendors and sustainability organizations, our goal is implement new methods in clay based construction to showcase the importance in food security and to help reduce food waste across the city.

Day 1 On-site Construction in Agoza Market

 

The whole team convened in Agoza Market to begin the construction of a pop-up exhibition structure that would be used to showcase different food preservation techniques.

The pavilion would include space for:

  1. Clay pot cooling (including Zeer Pot, Mitti fridge)
  2. Small scale hanging clay pots
  3. Terra cooling
  4. Food drying (spices)
  5. Canned food (jams)
  6. Mobile food cart prototypes

Together the goal of the pop-up pavilion is to not only showcase these preservation techniques to vendors within Agoza, but also to invite citizens and interested parties from across the city to learn and exchange information.

Day 2 On-site Construction in Agoza Market

 

The team, including members from Tena Kebena, as well as vendors from the market, worked throughout the day on the construction of the pop-up pavilion as well as develop the clay prototypes and mobile cart.

In the evening, Melat and Desalegn visited a group of mobile vendors that work primarily in the evenings from 6-9pm. This unique group of vendors work with very limited light presenting the team with new ideas and challenges in the development of the mobile cart prototype
